Resurrecting Easter Sunday
A day to make ravioli my grandmother says. She fetches flour from the cupboard and we start, apprentice and maestra. Heaps of flour pour onto the kitchen table.
It is snowing in the hills of Napoli.
We tunnel flour, bury egg yolks and anoint with water and salt. My hands, unskilled, mirror hands gnarled and forgiving.
She is the medium of our ancestors shaping dough into translucent sunshine. We cut the small circles, pale suns over ancestral farmyards.
Fragrant ricotta, parmigiana and parsley fill the centers. Each pasta is folded and sealed, completing the holy ritual.
We shroud the beds in sheets, sprinkle cornmeal and lay row upon row of ravioli to dry before casting them into boiling water.
Each one sinks below the boil, rises to perfection.
